Lodestar Black Mission Fig Jam

Ingredients

  • 1 teaspoon Lodestar® Olive Oil
  • 4 Shallots, peeled & diced
  • 1/2 cup Orange Juice
  • 1 cup Red Wine (Merlot or Zinfandel)
  • 3/4 cup Balsamic Vinegar
  • 1 sprig Rosemary, leaves only – finely chopped
  • 1/4 cup Granulated Sugar
  • 1 cup dry Mission Figs w/out stems and roughly chopped

Directions

In a small heavy bottom saucepot, heat olive oil over a medium flame. Quickly sauté the shallots until caramelized Deglaze with red wine, reduce slightly. Add the orange juice and balsamic vinegar – reduce by half. Add the granulated sugar and rosemary, stir to dissolve the sugar. Finally add the figs. Cook until the figs are soft and the liquid is syrupy. Transfer to a container to cool prior to using. Keep refrigerated for up to 4 days.

Figs actually bear fruit twice a year. August and September are peak season. Be sure to pick up some extra figs for eating while you are making this recipe. Another fig variety of the 720 known to exist is the Brown Turkey.
